New Food Friday #14 ~ Chicken Cacciatore

Monday night I made a Chicken meal. This isn't surprising as most Monday nights are chicken meals. What IS surprising is that this wasn't a YAH so it wasn't "time" for a chicken meal. I believe this came about from having Chicken thawing from a would-be Friday meal last week that didn't come to be.

Chicken Cacciatore

1.5 cups of chopped onions
3 pounds of chicken parts, skin removed
14oz canned tomatoes, with juice
5.5oz can of tomato paste
10oz canned mushroom pieces, drained
1 bay leaf
1 tsp of salt
1/4tsp of pepper
1/4tsp of garlic powder
1 tsp of dried whole oregano
1/2tsp of dried sweet basil
1/4 cup of white (or alcohol-free) wine
1/2 tsp of liquid gravy browner
1 tsp of sugar

1 - Place onion and chicken in 3.5L slow cooker.

2 - Combine next 12 ingredients in a bowl. Stir. Pour over chicken. Cover and cook on low for 6-8 hours or on high for 3-4 hours. Discard bay leaf before serving.

Makes 4 servings.

Miranda's Mix Ups: I didn't use "chicken parts" I used 3 chicken breasts that were boneless and skinless. Also no mushrooms for this family, instead I added carrots. Everything else was about the same. The White wine, since we only have red in the house right now, was the sparkling grape juice Arnold got last weekend. I'm not sure if it helped or hindered but it worked. We served it over rice.
