New Food #38 and 39~ Banana Cake and Peanut Butter Icing.

A few weeks ago at my parents house, there were alot of bananas going bad. Those darn kids weren't eating them fast enough! We made banana cake. And when Q was there last week he made it with Nana.

So it was only natural that when it was Q's day here he wanted to make Banana cake!

Here it is:

Banana Cake:

2 ¼ cups all purpose flower
1 ½ cups sugar
1 ½ teaspoons baking powder
1 teaspoon baking soda
1 cup mashed bananas (about 3)
3/4 cup buttermilk or sour milk I USE SOUR CREAM OR YOGURT
½ cup shortening I USE BUTTER OR MARGARINE
1 teaspoon vanilla
2 eggs

Grease and lightly flower a 13 x 9 x 2 baking pan.

In a large mixing bowl stir together flower, sugar, baking powder, baking soda, and salt. Add bananas, buttermilk or sour milk, shortening and vanilla. Beat with an electric mixer on low speed until combined. Add eggs beat on medium speed for 2 minutes. Pour batter into the prepared pan.

Bake at 350 oven for 25 to 30 minutes. Cool thoroughly

(just an FYI... it's good warm too!)

Peanut Butter Icing:

Icing sugar
milk
butter
Peanut Butter


Mix butter and icing sugar, add milk. Add in a dollop of Peanut Butter. Whip. To thin it out add more milk, to make it thicker add more icing sugar.

It's truly a guessing game but then you can figure out JUST what you want!
