Cookies!! Bonus "New Food Fridays" #6 ~ Honey Cookies

This weekend in Sarnia, Uncle Jack and I helped the kids make some cookies. Papa was wonderful enough to come along and take some photos for us.

Honey Cookies

3/4 cup of Honey
4 tablespoons of butter
4.5 cups of four
1 teaspoon of baking soda
1 teaspoon of ground cinnamon
1/2 teaspoon of ground nutmeg
2 eggs
3/4 cup of sugar
1/2 cup of finely chopped almonds
1/3 cup of finely chopped candied citron
1 tablespoon of grated lemon rind

1 - Heat honey and butter in sauce pan until boiling, remove from heat and let cool to lukewarm

2 - Sift flour, baking soda, ground cinnamon and ground nutmeg on wax paper

3 - Beat eggs until fluffy and add sugar. Slowly add in honey mixture. Begin to add almonds, candied citron and lemon rinds. Gradually add in flour mixture mix in well. Cool overnight

4 - Roll dough out, one quarter at a time onto a lightly floured surface to 1/4 inch thickness. Cut out any shapes and place them on a greased cookie sheet.

5 - Bake at 350 for 10 minutes. Remove from sheet and let cool. Decorate as desired.



We didn't let it go overnight (we put it in the "cold room" for about an hour or so. And we ended up putting the pot in the snow to have it cool down faster!!
